Kopi Luwak: Café a base de excrementos

Its aftertaste of caramel and limited production of less than one tonne per year account for its exorbitant price. In fact, el Civet, living in the coffee, eat beans, but unable to fully digest, expels almost unchanged. Good, not quite, actually, therein lies the secret of delicious Kopi Luwak. When the beans pass through the animal's digestive system, undergo a type of fermentation due to the action of enzymes and stomach acids that break down certain proteins into smaller molecules. The result is : an incomparable sweetness and caramel.

Defendant in perfumery for its fluid perineal musk and searched for their fur fur striped and dotted, this animal is particularly appreciated by their droppings.
